To complete the Angler Quest in Fisch, you need to catch a specific type of fish called Arctic Char, which is rare and can only be found at a specific location.

To catch Arctic Char fish in the game, head to Snowcap Island after accepting the quest. To get the quest started, go to the Moosewood Village.

After getting there, find the NPC named Angler as shown in the above image. After finding this NPC, speak to him and he will give you a quest to catch the Arctic Char fish. 

To catch this fish, head to Snowcap Island. The distance between Moosewood Village and Snowcap Island is very long so make sure to get a faster boat. 

Once you are on the Snowcap Island, take out your Fishing Rod and throw the line into the water. 

The Arctic Char fish is super rare which means you need to keep fishing for a few minutes. If you are lucky enough, you will catch the Arctic Char fish.

Once you get this fish, go back to Moosewood Village talk to the Angler NPC, and give the Arctic Char fish. When you do so, the Angler Quest will be completed.
